Christmas is my favorite time of year! It brings me joy when I start to hear Christmas music in the stores and Starbucks comes out with their holiday drinks. I have many holiday traditions and making Ginger-Snaps is one of them. These cookies are soft, chewy and spicy and pair perfectly with a cup of coffee, milk or egg-nog. 3/4 cup butter/margarine, softened
1 cup granulated sugar
1/2 cup molasses
2 1/2 cups all purpose flour
2 tsp baking soda
2 tsp ginger
1 tsp cinnamon
1/2 tsp salt
1 tbsp granulated sugar (for topping)
Cream butter and sugar. Beat in egg. Mix in molasses.
Stir in flour, baking soda, ginger, cinnamon and salt. Form 1” balls.
Dip the balls in sugar and place on baking sheet (with sugar side up). Gently flatten with a fork. Bake at 350 degrees F for 8-10 minutes. Do not over-bake to ensure the cookies are soft and chewy.
